Sweet Potato and Beet Chips with Garlic Rosemary Salt

Show: Everyday Italian Episode: Care Packages

Ingredients

Ingredients

  • 2 sweet potatoes
  • 2 beets
  • 1 garlic clove, minced
  • 1 teaspoon very finely minced fresh rosemary leaves
  • 2 tablespoons salt
  • 10 cups vegetable oil

Directions

Special Equipment: V-slicer or mandoline, deep-fry thermometer
Wash the vegetables and dry very well. Set aside.
In a small bowl combine the garlic, rosemary and salt. Set aside.
Warm the oil in a large pot over high heat to 350 degrees F.
Meanwhile, trim 1-inch off the end of each sweet potato. Using the V-slicer or mandoline, slice the sweet potatoes into very thin slices, about 1/8-inch thick. Trim 1-inch off the root end of the beets. Using the V-slicer or mandoline slice the beets into very thin slices, about 1/8-inch thick.
When the oil is hot add about a quarter of the sweet potato slices. Let fry until golden and the bubbling has almost completely subsided, about 2 to 3 minutes. Using a mesh sieve or slotted spoon remove the chips to a paper-towel-lined baking sheet. Sprinkle with some of the garlic, rosemary, and salt mixture. Continue with the remaining sweet potatoes.
Transfer to a serving plate.
Next, fry 1/4 of the beets. Let fry until curled at the edges and most of the bubbling has subsided, about 3 to 4 minutes. Transfer the beets to another paper-towel-lined baking sheet and sprinkle with salt mixture. Continue with the remaining beets. Let cool and transfer to a serving plate.

Spoon 1/4 teaspoon of the black bean mixture in the center of the plantain. Fold the edges of the plantain over the center of the plantain to close the bean mixture inside. Cured Red Onions:

  • 3 red onions, thinly sliced

A Beautiful Mind welcomes

ALICIA 'LISA SMILES' SMITH (NY)

I grew up in Crown Height’s Brooklyn born and raised were I currently reside. I wanted to move to the south years ago but since then I love were I’m at.
......NY is a beautiful city full of LIFE.

1. If there's a song that reflects your vibe, what would that song be? Do you meditate, pray or/and take time to mentally relax? If so, what part of the day? For how long?
It‘s Alright by Ledisi – I pray constantly always in the morning when I rise no set time I just pray. I try to meditate on the lord because that’s what my mother and grandmother instilled in me. That’s were my peace comes from. I’m learning to take out time to relax. It’s always been hard for me because I’m so used to being in the go. I guess age and realizing the cornerstone to good health is rest. Most of my friend would disagree with me but I have calm down a lot.
2. Tell us about KISS N MAKE-UP.
I stared kissnmake-up about9 years ago when I entered the make-up world. I always had a love for makeup since I was a little girl. My mother would forbid me from wearing it because I guess in her eyes she felt it was a sign of me growing up and she wasn’t ready to deal with that. After catching many times and making me take it off, she resisted and said “You like wearing that stuff” I said “yes I do” she said “Okay but don’t put too much on. I was on my way from there. I started working with DeVoe Signature Events on their glam team. They host full figured fashion shows and any other projects, I began doing shoots , weddings and other events and I’m also on call for clients that are attending personal events and want to look their best.
3. What early part of your life's journey prompted you to go forth this necessary outlet?
I just loved making my face up. I wanted to take it a step further and so I started practicing on my friends and it when from there. I was introduced to DSE from a friend I was dating at the time. Never knew it would open so many doors but it did. I met so many wonderful people and I started working with different photographers. I learn the good the bad and the ugly. All and all it was a great experience.

4. Tell us about your journey to being, "THE KARAOKE QUEEN".
My cousin invited to a bar called (Chocolate Monkey) one night. The feature for that evening was karaoke. I had never heard of karaoke before. When I arrived she said don’t worry I loaded your song in you’ll be fine. I started to panic. After that night I fell in love and came back there every week. Because I had attended so much I had became friends with the host (Terry Billy). One night while I was there Terry came over to me and asked me to host the next week because she was going away. “I said I can’t do that” She said “Lisa you’ll be fine”. I did it and enjoyed myself. The following week I returned and there was no Terry and was told she’s not coming. The owner came over to me handed me the phone and told me it was Terry. She said “welcome to you new job” “said what! I don’t understand” She said” I had to do it this way. Had I told you I was leaving you would have resisted the opportunity of doing what I know you’ll be great at, the job’s is yours if you want it.” That night was the start of Lisa Smiles. Since then the Chocolate Monkey closed but I have been hosting and many different spots all over the local Brooklyn area.
5. What new result (s) and/or positive occurrences are you most proud of so far in THIS arena?
Doing karaoke has made a difference in my stage presence. I’m no longer shy to sing in front of people. I can talk in a microphone in front of a crown at anytime. I have met so many people and I’m well liked by many.
It’s funny when I’m shopping in Target or walking around the area were I live, people say “I know you, you’re the karaoke lady” I say “yes I am”. It’s amazing!

6. WE all take on diverse tasks professionally & otherwise. With some of your successful experiences allowing you to connect with other purposeful, warm spirited people, what are some of your day to day activities?
I work for an investment banking firm in midtown Manhattan. I have been with them for quite some time. I learned just about everything there is to know about the market. The field of investments where in is called distress management. Lucky for us the recessing was our good year. We obtain companies that are going under, looking to sale and consult companies to keep from going bankrupt. To the jobs that pay the bills!

7.
What do you do for fun? What new fun thing would you like to try?
I love the movies; it’s nothing like the BIG screen. I go as often as I can. Lately I have seen a lot of kid films because of my daughter but it still cool. I go to other karaoke spots and I love listing to live music. I want to sing back ground for artist. I always wanted to go up on a helicopter ride. That looks like a lot of fun.
8. One thing on my Life List is... One my dreams are to have me own live band. I would so love that.
9. What/Who keeps your grounded in this ever changing world?
My daughter (Kahlia) keeps me grounded. One day she put on a crazy outfit and I looked at her and said “girl they’re going laugh at you. She looked at me and said. “Who Cares”? She has her own style and I love that about her. She doesn’t care what people say. And I have adapted that same quality! Who cares?
10. What are 2 qualities that you prefer and respect about your mate at this point in your life?
He is a go getter, a shaker and a mover. Whatever it is he wants he makes it happen. He keeps his circle (friends) small and he always encouraging me to enlarge my territory (Make-up and Music).
11. Who gave you 1 really good piece of advice early on and what was it?
My girlfriend Shawna she said “Never makes someone a priority when you’re only their option”.
12. What piece of business advice would you like to share?
Save save save the rainy days are very few and not far between. I would also say invest in mutual funds.

13. What is NEXT for you in 2010 and beyond?
I want to go back to school, and I’m certainly going take my make–up and music to another level
14. Choose 1: High Heel, Low Heel OR No Heel? HIGH HEELS
Choose 1: Novel, Biographies, Inspirational Book OR Blog? The Goddess Black Woman
Choose 1: Fresh Fruit, Fruit Smoothie OR Fresh Fruit Juiced? Fruit Smoothies I love em’
15. What word would best describe you right now? Procrastinator – I know I’m working on that!

A Beautiful Mind welcomes

BETHANY BUTLER (NY/DC/LONDON)

I've lived in Washington DC, Chicago, Los Angeles, London and I currently reside in New York City! Though I'm contemplating my next move, perhaps Austin, Texas.

1. If there's a song that reflects your vibe, what would that song be? Do you meditate, pray or/and take time to mentally relax? If so, what part of the day? For how long? The first song that comes to mind is India Arie's "Private Party":
All my life (all my life)
I've been looking for (I've been looking for)
Somebody else (else)
To make me whole (ooo)
But I had to learn the hard way (ooo)
True love began with me (ooo)
This is not ego or vanity (ooo)
I'm just celebrating me
Yoga is my meditation. Four mornings a week, 90minutes a class, I'm on the mat meditating through movement. Prayer is a constant, always available force in my life.

2. As a fabulous Actress, within ever evolving climate on Movie/Television/Stage acting, tell us about the new result (s) and/or positive occurrences are you most proud of so far from this?

Well, interestingly enough, I am no longer in the Industry, and I am most proud that after 11years in the business, I faithfully stepped out. The tiger's roar became the cat's meow and it was time for me to pursue my new interests! Rrrrrrrrrrrrrrrroar!.....and it's louder than ever! How fantastic is it to know that new doors can open at anytime. Ha! I've got my groove back (and my name's not Stella :))

Though, a new beginning calls for a solid foundation, and so the building ("baby steps" is my mantra) begins. Oh, life's about the journey! Embrace each moment, INCLUDING those you don't care too much for, those you want to just downright curl up in a ball and cry yourself dry....hmmm, yeah....um, embrace. There is light at the end, but you must keep going to see it, yes or yes?
3.What do you love most about being a Wedding Coordinator? How long have you been doing this? How many weddings to do anticipate working on this year?

I love working with the brides. Their excitement is contagious! I have the best job since I get to work on a couple's "Happiest Day"....everyone is in great spirits! I've been wedding coordinating for over a year now! I expect to work on 10 weddings this year. Hey, the more, the merrier....keep 'em comin'!

4. How did Yoga become one of your passions?

I needed a new workout! So, I took a Bikram yoga class to test this notion of yoga in an insanely hot room and LOVED it! Hence, my lifetime workout was born. Bikram is something else, I tell you, but hey, if you can take the heat, do yoga, and still stay in the "kitchen" for an HOUR AND A HALF, you've got stamina and some serious determination!!! I've since moved from Bikram to Vinyasa Flow and Iyengar. I miss the heat, but my hair is thanking me! Ha! Finally, I can get blowouts!! Though I can't remember the last time I had one, the curly look stuck.

5. With some of your successful experiences allowing you to connect with other purposeful people, what are some of your day to day activities during the school year?
My day begins with choosing an attitude of gratitude before getting out of bed. This sets my day and goes a long, LONG way. Yoga, healthy cooking (and eating), reading personal development books, listening to motivational speakers, building relationships (I send one physical card a day!), health counseling, and talking to my Mom, of course :)

6. What do you do for fun? What new fun thing would you like to try?
I cook a new recipe! This is great fun considering just a couple of years ago, boiling water was more than a notion. "Cooking" was not in my vocabulary. "Eat out...microwave..." were more familiar terms! But what a difference cooking for oneself makes, not just physically, but mentally, emotionally, Spiritually...and compared to eating out, easy on the pocket! A new fun thing I'd like to try is making ANY new recipe, and THE MOST FUN are the taste tests!

7. One thing on my Life List is...be a TV Personality in the area of Health and Wellness! And now, you are all witnesses!! NICE!

8. What/Who keeps your grounded in this ever changing world? GOD.
My MAMA.
Yoga.

9. What are 2 qualities that you prefer and respect about your mate at this point in your life?
I absolutely LOVE his smile and optimistic view towards this beautiful life. I LOVE his incredible commitment to our healthy, happy and solid relationship. (I have YET to meet him, but "Act As If"--yes or yes? Faith is powerful.

10. Who gave you 1 really good piece of advice early on and what was it? My dad said to me these three words one evening and they're constantly ringing in my head: "Believe, Belive, Believe" So simple and so profound.

11. As a a Health Chef, what meal is your favorite to prepare and why?
Oh, this is a tough one because I have so many! This week, for instance, I made a great "peanut" soba noodle dish with veggies galore. But, instead of using peanut butter, I used almond butter since it's a healthier alternative. My specialty are dressings....I can make some MEAN dressings to go with any salad, veggies, greens, pasta....you name it, I got a sauce!..a healthy one too! I'm happy to share with you ;) Quinoa deserves special mention. Don't even have me start with the quinoa! This grain deserves an entire interview. Yes, I'll leave it at that.

12. What piece of business advice would you like to share? Appreciation wins over self-promotion every single time!
Build relationships FIRST and the business will follow. People are people, not "leads, prospects, opportunities...." they have feelings, interests, families--be interested in OTHERS and their stories! People are fascinating!

13. What is NEXT for you in 2010 and beyond?
Culinary School!!....And continuing to help others (locally, nationally, internationally) make healthier choices in their diet and lifestyle. Food fuels us to lead the lives we most desire and everything we put into our bodies has us vibrating on SOME energetic level. I help people make the best choices for them to perform at their highest level. Baby steps lead to BIG CHANGE!

14. Choose 1: High Heel, Low Heel OR No Heel? Low Heel
Choose 1: Novel, Biographies, Inspirational Book OR Blog ? Inspirational BookS!!

Choose 1: Fresh Fruit, Fruit Smoothie OR Fresh Fruit Juiced? Fresh Fruit (preferably organic ;-)

15. What word would best describe YOU right now? GIDDY!
